RACKING
A common term for the syphoning of beer from one container to another, leaving behind any sediment in the first container.

SPARGING
Spraying the grains and hops with hot water to recover the sugary wort trapped in the

SPECIFIC GRAVITY (SG.)
The density of a liquid compared with water. If  it is less that 1.000, it is lighter than water, if more than 1.000 it is  heavier.

STERILISING
Essential cleaning of all equipment that comes in contact with the beer.

STRIKE HEAT
The temperature of the water ready to receive the grist at the start of mashing.
