  • TCP taste in beer. This usually means that the water used to brew the beer was high in chlorine. Next time, boil the water and then let it cool before using it.
  • Sour tastes usually means that the beer has been contaminated. This could be the result of either not paying enough care with sterilising, leaving the beer too long in the bucket or not having an airtight seal during maturing. An infection in the beer will get worse as time goes by. Discard the beer and thoroughly sterilise all equipment with a good quality steriliser.
